My Favorite Recipes As a Busy Small Business Owner

Anyone else out there struggle with finding the time to make a great meal - or just get overwhelmed by the number of recipes on Pinterest?

That is TOTALLY me.  Want to know a secret?  My husband and I literally made the same 5 meals EVERY SINGLE WEEK for the first YEAR AND A HALF of our marriage - I literally got to the point where I couldn’t eat because I was SO TIRED of the same meals.

We then started scouring Pinterest for meals, and soon found that there are definitely different levels of time/expertise for each meal - and being a busy business owner, I needed something quick and simple - but still good!!!

Here are some of our FAVORITE meals that are very very VERY easy to make - add these to your list and try them out!

BETTER THAN TAKEOUT FRIED RICE - Natalie at Life Made Simple Bakes

This is one of my favorite meals to make with guests, because it is SO SIMPLE… and who doesn’t like fried rice!  You literally just have to cook rice, chicken, eggs, and mix it all together with some sauces and mixed veggies - so so so easy, and so delicious!  Plus we are always left with tons of leftovers, which I can never complain about!

KETO CHICKEN THIGHS WITH CREAMY MUSHROOMS SAUCE - Mom Secrets

I stumbled on this recipe when we had a friend over that was currently doing keto, and I am now obsessed with making it!  The ingredients are pretty simple, and we usually throw it over mashed potatoes with a side of asparagus, and it tastes like a gourmet meal!

KOREAN GROUND BEEF AND RICE BOWLS - Alyssa at The Recipe Critic

This is hands down one of my favorite meals to make AND eat!  It’s another one of those where you combine a couple spices/sauces, cook the meat, and just throw it all together!  It’s also a great recipe to pack up for lunch at work and tastes just as good as leftovers.  Plus, we like spicy foods, so we add some extra heat with our spices, as well as add some Sriracha on our rice, and it’s fantastic.

Garlic Butter Turkey Meatballs with Lemon Zucchini Noodles - Christina at Eatwell 101 

Now, first a confession - I don’t actually make zucchini noodles (because, again, super busy)!  I just add gluten free noodles instead, and it’s so easy to make!  If you like spicy foods, this is for you - a simple meatball filled with parmesan cheese and italian spices, mixed with noodles and hot sauce (we use Sriracha), making it a fun alternative to spaghetti.

Slow Cooker Butter Chicken - Stacey at Bake Eat Repeat

Of course, I had to add a crockpot meal to this list!  I love Indian dishes, so having a homemade Butter Chicken recipe is AMAZING when I need something that doesn’t require a ton of hands on work.  This does require a good number of ingredients, but most are pretty standard ones that you can find at your grocery store!  We tend to add more spices than listed since Indian dishes generally are pretty strong in the spice department - and I LOVE it!!!!
